DJ Mull's Silencio BBQ Sauce
Our dear friend, DJ Mull, has been a one-stop shop for virtually everything during this quarantine period in San Diego - from Capri Sun inspired cocktails to bike repairs to hearty soups feeding customers and hospitality crews alike. It's no surprise then, that when we asked DJ for a Silencio Mezcal BBQ Sauce recipe, he already had one that is every bit as delicious as it sounds. Combining the subtle citrus & earth taste of our mezcal with the timeless taste of southern barbecue sauce, this recipe for mezcal barbecue sauce is perfect for a holiday weekend made for soaking up every moment of summer around the grill.
INGREDIENTS
.5 cups Mezcal El Silencio Espadin
4 tbsp Butter
2 Small Yellow Onions Diced
6 Cloves of Garlic Minced
4 cups of Ketchup
2/3 cup Molasses
2/3 cup Brown Sugar
1 cup Apple Cider Vinegar
(+ more to taste if you want it to have an extra kick)
4 tbsp Yellow Mustard
2 tbsp Chili Powder
1 tsp Ground Black Pepper
1 tsp Cayenne Pepper
INSTRUCTIONS
Melt the butter and reduce to medium heat.
Saute the onions in the melted butter.
Add Mezcal El Silencio Espadin and let the onions sweat and cook until they're translucent.
Add the garlic and saute for an extra minute.
Add the rest of the ingredients and bring to a boil.
After reaching a boil, reduce heat to medium-high and simmer until the sauce thickens (about 20-30 mins).
Blend the sauce and let it cool down to room temperature before serving.
Slather this all over your favorite BBQ items from the grill and enjoy all the smoky delicious BBQ flavor!
